PBB Pancakes
(aka PB2 & Banana)

Ingredients:
2 overripe bananas
2 eggs (or vegan egg substitute)
2 tbsp PB2 aka powdered peanut butter (+ a little water)
1/2 cup old fashioned rolled oats
Optional: frozen wild blueberries, mini chocolate chips, chopped nuts, pumpkin puree, or other mix-ins
Optional: Butter
Optional: Honey or Maple Syrup
Optional: Cinnamon
Steps:
Heat your pan or griddle over medium-low heat. It’s key to give it time to warm up, and to keep the temp low so they don’t burn and stick.
Peel the bananas and mash in a large bowl with a fork. Keep mashing and stirring until you achieve a pudding-ish consistency. You can also throw them in a blender.
Crack the 2 eggs directly into the banana-mash.
Put 2 tbsp of PB2 (powdered peanut butter) into a separate small bowl. SLOWLY add a little bit of water at a time and stir. Keep adding until it’s fairly runny- we want it easy to mix in, not thick like peanut butter. Pour this in with the bananas and eggs.
Sprinkle the oats over the bananas, eggs, and PB2. Stir it all together well! **You can add more oats for chunkier pancakes.
Use a ladle or 1/4 cup scoop to pour the pancake batter onto your warmed (and greased) pan or griddle. Do not flip until you can see some bubbles coming through and the pancake has firmed up. These are slower to cook than regular pancake mix.
Assemble:
Top with butter & your favorite sweetener and/or spice. I prefer to drizzle with honey and sprinkle with some cinnamon.
