Ultimate Avocado Toast

Ingredients:

2 large slices sourdough bread (fresh if possible!)

3-4 eggs (or vegan egg substitute)

1/2 ripe avocado

2 tsp Trader Joe’s Crunchy Chili Onion Oil

2 handfuls of microgreens

Mike’s Hot Honey (you can totally use off-brand, but Mike’s is the best!)

Salt & pepper

Optional: Butter

Steps:

  1. Start by washing those microgreens and thoroughly dry them with a salad spinner or pat dry with a towel.

  2. Scramble 3-4 eggs (depends on how big your bread is and how many eggs you want to pile on top!). Cover & keep on low heat.

  3. Toast your sourdough bread. *Optional to butter once toasted.

  4. Split the 1/2 avocado between the 2 slices of bread, mash, and spread. If your avocado is small, go ahead and use the whole thing!

  5. Add your scrambled eggs on top of each slice of avocado-y toast.

  6. Stir the Trader Joe’s Crunchy Chili Onion oil well before drizzling approx 1 tsp per slice over the scrambled eggs.

  7. Add a handful of microgreens on top of the scrambled eggs on each slice.

  8. Drizzle with as much Mike’s Hot Honey as you like on top of the microgreens. I like a lot :)

  9. Add salt & pepper to taste.
