TJ’s Fancified Fried Rice
Ingredients:
1 bag Trader Joe’s Japanese Style Fried Rice (can use other brands)
1 bag broccoli florets / 1 head broccoli
1 block Trader Joe’s teriyaki marinated tofu (also available at Sprouts) **can be swapped for protein of choice
2 eggs
Soy sauce
Sriracha sauce
Furikake seasoning
Avocado oil spray
Steps:
Heat a large deep pan or wok over medium heat, spray with avocado oil (or other high-heat cooking spray)
Dump the bag of frozen fried rice right into the pan, add about 1 tbsp water and stir occasionally.
Microwave, steam, air fry or roast the bag of broccoli. If desired, cut into smaller pieces.
Chop 1 block of the teriyaki tofu (save the other for another meal) into small pieces.
*Optional - pan fry or air fry the tofu pieces until they are crispy
In your big pan of rice, use a spatula to create a hole in the middle of the pan by pushing the rice to the sides. Crack both eggs into this space.
Allow the eggs to cook slowly in the middle of the pan, scrambling with a spatula. Do NOT mix into the rice until the egg is mostly cooked, or it will become gooey rice.
Add the broccoli and tofu to the big pan, and mix everything together.
Season with as much soy sauce & sriracha as you like.
Allow the rice to sit in the pan a bit, stirring less often to create crispier fried rice.
Assemble:
Serve (makes 2-3 servings) in a bowl topped with plenty of Furikake seasoning, and a bit more sriracha if desired.
